“Fior di Ribes” is a DOCG organic rosé wine obtained by the soft pressing of Bombino Nero (90%) and Nero di Troia (10% max) grapes. It’s produced in Corato, north of Bari Murge, Puglia, Italy, at 250 meters above sea level, and comes from a family farm that has been making artisanal wine and oil since 1822. We are close to Castel del Monte, an octagonal castle of UNESCO Heritage, as shown on one of the Italian euro coins.
About 7,000 bottles per year, with a light rose color, this DOCG organic rosé wine reminds of intense wild strawberries, raspberries, currant, and herbs scents. It has a captivating, dry and savory taste, much appreciated by those who love elegance and delicacy. Alcohol 13%.
Fior di Ribes is obtained from selecting the year’s grapes cultivated organically on calcareous soil, hand-harvested, cadastral sheet n. 40, parcel 271. The plants are about thirty years old; partial replanting was carried out in 2023 with single Guyot high espalier growing.
Soft pressing, maceration of destemmed grapes for thirty minutes maximum, cold decantation, fermentation and refinement for five months in steel, bottled as a single batch at the end of winter.
Our DOCG organic rosé wine matches well with appetizers, lightly fried food, cured meats, and risotto with asparagus. It is also a “swimming pool wine”, with Apulian green olives since every food takes something away from its lightness, which nevertheless cleans the palate well thanks to its freshness and good acidity.
It is recommended to drink this wine within three years after harvesting, at a temperature of 8-10 °C, at the moment of tasting it.
