Riserva “Le More”, an organic DOCG red wine, is produced from pure Nero di Troia grapes, grown in a nursery after a massive selection of a farm clone from the “Castigliola” field. It’s made in Corato, Puglia, by a family farm that has been producing artisanal wine and oil since 1822. Vines are grown at single Guyot high espalier with a density of 5500 plants/hectare, cadastral sheet 30, parcels 167 and 196.
Riserva “Le More” is distributed four years after harvesting. Smell and taste of berries, red ripe fruit under spirit, spices, laurel, tobacco, licorice. Well structured, lightly tannic, enveloping and persisting, with a unique taste that joins ripe fruits, spices, wood, licorice, and herbs.
It’s been organic-cultivated since 2013, with exclusively handmade harvesting in the first decade of October. Clusters selection, soft pressing, healthy fruits macerated into rotating stainless steel tanks and hot-cold technique. Malolactic fermentation in steel, aged 12 months in 228 L French oak barriques, a mix of first and second passage, and a similar time in bottles, in cellars at controlled temperature and humidity.
Production is of only 4,000 bottles/year. Excellent structure and tannin, 3,000 mg/L of polyphenols; ideal basis for aging is beyond ten years in good times. Ruby red color, orange shades after the first 10-15 years.
Hot and tannic, this Apulian organic red wine does not fear any comparison with the best pure grapes red wines destined for long aging. Following its evolution into the bottle is exciting because time smooths the structure and improves elegance.
Alcohol about 14.5%, total acidity 5.5 g/L. Riserva “Le More” is good with roasted meats, mature cheeses, Murge sheep cheese, grilled Murge mushrooms, goulash and typical Eastern, lightly spicy food. We recommend tasting it after ten minutes of oxygenation in a glass bottle at a temperature of 16 °C.
